I made this dressing to go with my raw vegan bean salad (recipe coming up tonight!) but it’s so good I wanted to share it with you on its own. It has the perfect blend of acid from the vinegar & lime juice and sweetness from the rhind & agave. I used just enough olive oil to pull it all together (most dressings use substantially more) but I wanted mine to be fresh and focused on the bright limes & sweet basil. You can use this on salads, grilled or baked proteins, or even get creative and spread it on a crusty sandwich with fresh mozzarella! Yum!
Oh and this is gluten free and vegan. :)
ps- for all you college kids out there, one of my favorite tricks is to bring my own salad dressing to the dining hall. The salad bar always had fantastic stuff (which I would pair with proteins from the grilled station) but never a good healthy dressing so try packing this up and making yourself a delicious good-for-you dining hall meal!
